Next on my list of quick and delicious summer dinner recipes is a beautiful bolognese sauce which you can serve over pasta, or even with some fresh crusty bread.
I’m adding lots of fresh garden herbs to this sauce to make it extra special.
The ingredients (4 servings)
- 0.5 kg minced beef
- 690 ml strained tomatoes
- 1 cup water
- 1 carrot, chopped finely
- 1 celery stalk with leaves, stalk and leaves chopped finely
- 1 onion, chopped finely
- 2 cloves garlic, minced
- 5-6 basil leaves
- 1/2 handful parsley
- 3 tbsp olive oil
- salt and pepper
- parmesan cheese for grating
Sauté the onions, carrots, and celery stalk in the olive oil, with a pinch of salt and pepper, until the onions are translucent and the veggies are soft. Add the minced meat and cook through until brown. Add the garlic and cook for another minute.
Add the tomatoes, water, basil, parsley, celery leaves, and a pinch of salt.
Bring to a boil and then simmer on medium-low, uncovered, for about 20 minutes. Taste the sauce and adjust the seasoning.
To serve, mix in with a pasta of your choice, or on fresh crusty bread. Grate parmesan over the sauce.
